
Pistachios add a distinctness to this sweet treat, and are scattered throughout the chewy and tender blondie. This cookie bar is buttery (sans butter), chunky, and sprinkled with large sea salt flakes to enhance the flavors in this delicious dessert.
These blondies can be baked in a baking pan. I chose to use my cast iron skillet because I have quickly grown to adore my cast iron pans. They are easy to clean, easy to use, and have stood the test of time. I love the look of a dish, savory or sweet, in a cast iron skillet. To me, it’s inviting and warm.

Salted Pistachio Skillet Blondies
Description
Pistachios add a distinctness to this sweet treat, and are scattered throughout the chewy and tender blondie. This cookie bar is buttery (sans butter), chunky, and sprinkled with large sea salt flakes to enhance the flavors in this delicious dessert.
Ingredients
- 1/3 cup coconut oil, melted and cooled
- 1 tbsp coconut oil (to grease the pan)
- 1/2 cup coconut sugar
- 2 eggs
- 1 tbsp vanilla extract
- 1 1/2 cups almond flour, finely ground
- 1 tbsp coconut flour
- 1/4 tsp baking soda
- 1/4 tsp sea salt
- 3/4 cup shelled pistachios
- coarse sea salt for sprinkling (optional)
Instructions
- Preheat oven to 350 degrees. Oil the inside of your skillet (or baking pan) with 1 tbsp coconut oil.
- In a medium mixing bowl, whisk together the 1/3 cup coconut oil and coconut sugar.
- Add the eggs and vanilla and whisk until completely combined, about 2 minutes.
- Add the almond flour, coconut flour, baking soda, and sea salt. Mix thoroughly.
- Fold in the pistachios, then pour batter into your greased pan. Flatten the top with a spatula, and bake for 25-30 minutes. Edge will be browned and center will appear set.
- Let the blondies cool for 20-30 minutes before cutting or serving. They will set more as they cool. Sprinkle with coarse sea salt flakes and more pistachios (optional).

Recipe slightly adapted from Cast Iron Paleo, by Pamela Ellen For a less chunky dessert, roughly chop the pistachios. These would serve well with a scoop of ice cream.
