This is my go-to salad when I realize that I have no salad or greens planned for dinner. It has saved me many times for dinner parties. For some reason, the salad is always the last thing on my mind amidst planning for the entree, sides, and dessert. A quick glance in the refrigerator and if I have arugula (I almost always have some), I know exactly what I’m going to make – this simple arugula salad.
It’s really hard to mess up, and is always bright and peppery. It really does pair well with almost anything, making it one of those recipes you should tuck into your back pocket for safe keeping.
I’ve included a general recipe below. Although, this is truly one of those “to taste” recipes. Do you like more lemon? Add more lemon. Needs more parmesan? Add it. Are you a pepper lover like me? Add ALL the freshly cracked pepper. I never follow measurements for this salad and after a few times making it, you won’t need measurements either.

Simple Arugula Salad with Lemon and Parmesan

Ingredients
- 1 bag arugula
- 1/3 cup grated parmesan
- zest of 1 lemon
- juice of 1/2 lemon
- 3 tbsp olive oil
- freshly cracked black pepper
Instructions
- Toss the arugula, parmesan, and lemon zest in a large bowl.
- Drizzle with olive oil and lemon juice, and toss.
- Top with a lot of freshly cracked black pepper and serve.
Notes
These measurements are just guidelines. Add more or less of each ingredient depending on your tastes.
